I am looking into getting back into homebrewing and building a new system. Im also looking at the spike electric system and comparing it to SS brew tech. Are you happy with your decision? I'm looking at the 15 gallon Spike+ System.
I've pitched one vial straight into a beer before I knew about making starters. The beer turned out pretty good, but the lag was scary. I thought my yeast was dead.

My problem is that I"m always off on my brews. I'm brewing the beer I want to drink in the summer in the summer and the beer I want to drink in the fall in the fall, etc.
The effect is I'm always a season off.
I could cut out the vienna alltogether.

4lb munich
1lb dark munich
8-12oz caramunich II
The guys who are asking are not BMC drinkers. They are just tired of ales and want to push me to do something new.
As said above, it depends how much roast you want in the IPA. I like a little roasty background. I went this route and it was a big hit with my friends. If you want almost no roast, go with midnight wheat. It will get it black as night and has no noticeable flavor.

Is there a huge difference between pils and vienna? I wanted more malt and I figured the extra biscuit I got from vienna would give me that. I've used it as a base malt before without any issues. Plus you don't need a 90 minute boil with vienna.
