It seems my water is workable , but don't know where to find out what to add and ect. And amounts to make it balanced or what ever I need ?

Some vids are better then others when I first started that was the best tool. But I also had bought palmers book ! And I still go back to it. The more you brew the more in-depth you can get into the book.
I personally think , the extra wort would great. Being you grain bill is for six gallons you won't be deluding. But I'm not sure but if you only plan on collecting 4.5 gal. You might be leaving sweet wort behind ... Hurting efficiency. I've had one or two :-) so I may be on the wrong page...

You need to watch Don O. On YouTube he does that all the time I think due to his kettle size check him out.
I normally plan on extra after I sparge only about a gallon or 1 1/2. And boil it about 5-10 min and store in sterilized quart jars. And use a quart at a time for a yeast starter for my next brew in line.. But I do reboil and cool before pitching yeast .

I had the same question basicly a good while ago. For what I believe now a 70 qt is great for 10 gallon batches. Isn't great for 5 gal batches but only due to the fact of possibly more heat loss during the hour rest. So as long as you account for it and keep an eye on it with smaller batches you...

I was thinking about setting up the HLT with a 4500 w element and a PID. So when I sparge the HLT will stay a constant temp , untill some time I can get a pump and be half way towards a HERMS system.
