You install an external temperature controller that allows you to set what temperature you want it at. Basically you plug the freezer into the controller and the controller into the wall. The whole thing takes maybe 5 minutes.
I made this for the first time this weekend. Did one 1 gallon batch with no sugar and another 1 gallon batch with some brown sugar added. Curious to see the difference in a month.
