That is pretty cool! I would be worried about the flame from the burner though around the ignition wires. Wouldn't the heat from the burner melt the wires after ignition?
I have the 20 gallon setup. I use a Therminator plater chiller that feeds into an immersion chiller in a bucket of ice water. Chills the wort down to below 68 by the time it hits the fermenter.
I'm not sure of the actual ppm. We used like 4 mls in 6 oz's of water. We couldn't detect it at 4 ml but when upped to something like 16 mls we could taste (at least we thought) a bit of sourness.
That's exactly what I do when brewing. I typically use between 13 and 16mls depending on the grain bill. Works perfectly and I nail the pH about 99.9% of the time using the Bru'n Water Calculator.

I have a Bru Gear - I don't use it for induction but it's a great kettle. I have the Pro Boiler 20. Looks great, cleans up well and has been rock solid since I first got it. I like it so much, I ordered another to use as a mashtun and will be getting another for a hot liquor tank.
Didn't have to do anything additional. Just drilled a hole big enough to thread the thermowell into it and tightened it down. I've removed it for cleaning with no issues as well. Seals up tight and clean.
Here are two recent pics. One of the front showing the thermowell next to the spigot and another of the inside so you can see how far it goes into it. So far, they have been working perfectly. No issues with leaking or with cleaning them out.
I used a weldless thermowell for my 15 gallon Speidel as well. I bought the one from Williams Brewing (The 3" stainless) and put it to the right of the spigot. Has worked perfectly with no leaks for over a year. I have 2 15.5 gallon Speidels set up this way with no issues.
