One thing to keep in mind is that most hydrometers are calibrated to 60F. So its usually a good idea to transfer from the wine theif to the sample jar, then cool the sample in the fridge to get it down to 60F for an accurate gravity reading.

It'd be on an open shelf in my kitchen which has no natural light (nearly windowless apartment). Only overhead lighting. I do tend to keep them for a while (up to 6 months) but then again nothing I brew is Hoppy.
If I don't age them in the dark what happens?
So I was always told that while bottles are carbing up you're supposed to keep them in the dark. BUT if I am using brown bottles, do you really need to?
Don't wanna waste a batch of beer but anyone ever carb them up on just an open shelf (i.e. not in the dark)?

I can't ever get enough of the simcoe/amarillo combination. Very fruity and So tasty. I play around with the grain bill a lot but never the hops.
Has anybody used the Castle Malting (English) Add-on in beer smith? I'm making a Belgian Dubbel and I'm not sure the potential S.G. is in there correctly.
For example it says castle malting's Munich malt only has a potential SG of 1.000. It's a base malt...that can't be right. Plus the...
