    I have some left over Crystal Malt, about half pound each of 10L and 60L, and a Brewers Best Oktoberfest kit. Do you think I could use any or all the Crystal in the Oktoberfest kit, or would there be a better kit to apply the Crystal malts to?

    Cooper's Draught Beer Kit

    I have a Cooper's Draught in the fermenter (7 days now). It's my first 5 gal brew so I didn't want to do anything but follow the directions this time out. This will give me a frame of reference so if I want to add hops, more extract or grains I will know where I am starting from.

    I agree. Shortening up your fermenting time could have no desirable result, if I understand correctly. You can always sample the final process at any time to see the results, but it's tough to go back to the fermenter.
